Global knives are made from the finest Cromova 18 stainless steel, ice tempered and hardened to Rockwell C56-58 degrees which holds a razor sharp edge longer and resists rust, stains and corrosion. To ensure a long lasting cutting edge, the blade of a Global knife contains a high level of carbon. It is necessary therefore to wash and dry immediately after use to avoid damage. Sharpening Steel The Lion Sabatier trade mark was registered in 1812 by the original Monsieur Sabatier. Only Lion Sabatier knives feature three solid brass rivets to secure the handles (brass is more durable than steel or aluminium for this purpose) and the unique oval Sabatier logo which is stamped into each handle.
